Revolving Test Kitchen Overview

 

WHAT IS REVOLVING TEST KITCHEN?

Revolving Test Kitchen is a shared culinary workspace with multiple prep and cook spaces with dry and cold storage.  RTK will accommodate cross-sections of food businesses, including food trucks, catering companies, small batch manufacturers, food delivery companies, etc...

 

WHY WORK IN A SHARED KITCHEN?

There are many reasons – a few being the lack of commercial kitchen space in the Lawrence area, the cost of taking on long-term leases, and the overheads associated with a commercial kitchen facility.  We take care of all of those elements, providing a facility where companies can come in and focus on their core business – making and selling food.

 

HOURS OF OPERATION / SCHEDULING

We are open for food production from 4 am to midnight, with 24-hour access.  Space is booked on a first-come-first-served policy.  Members reserve times through an online platform (“The Food Corridor”), which is approved and monitored by our Director of Operations.  As space is limited, and to prevent any business from “holding” time needlessly, there is a 50% cancellation fee charged to any booking canceled within 24 hours of the time the reservation commencement.

 

RENT INCLUDES

Your monthly rent includes:

  • All utilities (water/sewer, electric, gas)

  • Trash and recycling

  • Internet

  • Property tax

  • Basic kitchen supplies, wares, and cleaning products

  • Management of the facility & schedule

  • Professional cleaning service

  • Equipment maintenance and upgrades

  • Food safety auditing

  • Member Meetings & Round Table discussions

  • Social media/Newsletter features of your business or products

 

RATES

  • $350 refundable deposit

  • Monthly base rent of $350, for 10 hours’ worth of designated kitchen time

  • $35/hour for additional kitchen hours past the first 10

  • Dry Storage Shelf - $15/month

  • Fridge Shelf - $20/month

  • Freezer Shelf - $20/month

 

HOW TO BECOME A MEMBER

  • Fill out the online member inquiry form (available in English and Spanish), on this link

  • Schedule a follow-up phone meeting to go through your business, storage needs, and usage of the facility.

  • Schedule an in-person meeting and tour of the facility

  • Receive a certificate of approval to apply for a license

  • Work with RTK management to go through the full application and licensing process, leading to your pre-op inspection, and finally membership in the RTK kitchen.

 

WHEN WILL THE SPACE BE OPEN?

The space is still currently under construction, with an anticipated soft-opening date of March 2021.  At the same time, we are also updating the branding and digital presentation (even the name of The Revolving Test Kitchen might change).  A full public launch will happen approximately 2 weeks after the soft opening of the facility.  In the meantime, we are inviting interested businesses to apply to be part of the “founding group of members” prior to the public launch.

The Revolving Test Kitchen is a collaborative initiative facilitated by the Lawrence Partnership, operated by Foundation Kitchen, and in collaboration with NECC, the City of Lawrence, Lupoli Co., and EforAll/EparaTodos.
